I have been testing and researching a bunch of different ERP/CRM
solutions for our small company. From what I have seen so far ERPNext
is probably the most capable in its class. Help is always very
forthcoming as well.
Since laptops are getting smaller (I am writing this on a 13" screen)
I have a suggestion in terms of Layout and appreciate any input as
well.
The side bar would be better positioned at the top with pull downs
maybe.
Things like Setup & Help could be at the bottom. A Power Off button
in Red on the upper right for log out.
The right side takes too much space in my opinion and I really don’t
have a suggestion for that.
Instead of scrolling down, would it make sense to have on the same
screen (i.e. Customer) a couple of tabs for More Info, Sales Team,
Transaction? Since these information are not needed every time I look
up a customer?
I prefer to go sideways on my wide screen then down.
We are in the process of removing the left sidebar. This should improve your experience considerably.
Due to this change, your work area will get centered and hence, look spacious on smaller screens.
Regarding the tab pages suggestion, the world is moving to a general user interface. An interface compatible with all devices. Due to the advent of touch screens and multi-touch trackpads or scrollable mouse, scrolling has become a natural adaptation compared to clicking. We have discussed on this matter, even had such an interface a few years back. It didn't work. Hence, we do not intend to divide the page content into tabs.
We are in a process of making many user experience changes. You must've noticed the top bar and buttons. (Thanks to Twitter Bootstrap's css). Keep watching.

Thanks for the quick, NO, lightning fast response. You have more
experiences with it than I do. We have tried ERPNext on an Ipad as
well as on my HTC Android phone. It works very nicely.

Sales invoice is an accounting transaction. Hence, you cannot bypass
income and cost center fields.
If you can do without these field, probably Sales Order is the
document for you. Sales order is the document to confirm an order from
customer. And it doesn’t have income and cost center fields in item
table. But this will not do posting in accounting ledger.

When in customize form view, select for type from drop down as "RV detail".
As soon as you selected stated option, it will list all the column sales invoice has in item table. You will find "Income account" and "cost center" as row. Check column of default.
So, for income account, default can be: "sales-(company abbreviation)". And for cost center, default will be: "Default cost center".
