Hi, the default email send through the Erpnext mail-server is my login-name.
Can this be changed by just entering an alternate email address under auto-email ID, still using the Erpnext mail server?

This can lead to a security hole in the system. Any other user can send spam/unauthorized email from your id.
The feature was there in the past, we have removed that for better security.

This has been fixed in the upcoming release. Emails will be sent using the value of email field in the Profile.
