On the standard public facing website of an ERP Next install, what is the best way to customize the header section (brand name + pages).
Second - is there documentation and a location of the “standard” theme files.

Header and Footer of ERPNext Website is managed via Website Settings. For help on Website Settings, check:

To setup companies logo, you can use Brand feature in Website Settings.
