Can SITE_NAME take more than one parameter when using docker

I am using GitHub - frappe/frappe_docker: Docker images for production and development setups of the Frappe framework and ERPNext behind my own NGINX.
My .env file looks like this

#CERT_RESOLVER_LABEL=erpnext.local.no-cert-resolver
#HTTPS_REDIRECT_RULE_LABEL=erpnext.local.no-redirect-rule
#HTTPS_REDIRECT_ENTRYPOINT_LABEL=erpnext.local.no-entrypoint

(note demo.site1.com and demo2.site1.com represent real subdomains)
I am able to access demo.site1.com but not demo2.site1.com
I could not find documentation on whether SITE_NAME can take more than one parameter.
This is unlike SITES which can take more than one parameter.

What must I do to enable demo2.site1.com

SITE_NAME is used by site-creator container. It is only run once.

All I need to do is
Step 1. I run docker-compose --project-name erpnext up -d
This will setup demo.site1.com

Step 2. I run docker run
-e “SITE_NAME=demo2.site1.com”
-e “DB_ROOT_USER=root”
-e “MYSQL_ROOT_PASSWORD=password123”
-e “ADMIN_PASSWORD=password123”
-e “INSTALL_APPS=erpnext”
-v erpnext_sites-vol:/home/frappe/frappe-bench/sites
–network erpnext_default
frappe/erpnext-worker:v13.0.1 new
This will setup demo2.site1.com
