How can I add some fields from this like other informations like birthday country address and others?

Perhaps you should add these fields in the Contact master. Using Frappe Portal, you can have those fields appearing in the Customer’s profile as well, so that they can update it. Please check the following link to learn more about Frappe Portals and how can it be customised.
