Unfortunately this is not very easy. Having a text editor like TinyMCE (the one used in your example) can only lead to more frustration, because its hard to fine-tune stuff when you add tables (most emails don't have tables).
Ideally you must move away from prints and email documents directly to your customer. Where absolutely necessary, use as simple formats as possible.
