So I sell a service that does not require any delivery as once it is sold it is assumed that the service is complete. Is there any way to remove the necessity of a delivery order being entered?

Check:
Selling >> Setup >> Selling Setting
Set field Delivery Note Required as No. With this, you will be able to create Sales Invoice from Sales Order without Delivery Note.
There is no way to do this on a item by item basis?
Edit: I have some items that need to have a delivery order and other items that do not need a delivery order. Currently, a delivery order shows up as necessary for all sales orders to go to invoice.

Please post this as feature suggestion on Github. For now, try creating separate Sales Order (of type maintenance) for service items.
