How to set read-only datetime field based on submission of data in a field? (i.e. timestamp of when a field was populated)

Any suggestions for this one?

Basically I am using a signature block, and I want to associate a “signed_timestamp” with the signature.

There will be multiple signature blocks / signers, so it gets a little tricky.
