How to add more choices to "project status"?

I want to create a KanBan with all projects based on their status

I’d want to have other then the default one (open, closed, cancelled) though.

I can’t quite figure out where the status field for projects can be set up. It doesn’t seem to be the same as the Task status. Can anyone advise on this?

EDIT: it almost looks as if this was not possible (same for tasks), is that so?

You can do this via Customize Form → Project

For the field Status (which of type Select), add the status options as required.

It says that “You can’t set ‘Options’ for field Status”
I’m guessing that some default doctype you can’t fully customize them
