How Can I put some watermark text saying that it was "PAID" in my print format?

Perhaps you can create a new Print Format, with Paid value in the heading. You can add this value (Paid) in the header section of Print Format Builder as well. For now, we cannot have this value visible based on the condition of invoice status (paid / unpaid).
