Can anyone suggest how to calculate in a salary structure earnings a premium for night shift working. timesheets seem to hold the necessary data, but I seem only to be able to access total_hours_worked and not when they were worked?

You can create new Activity Type for the night shift. In this Activity Type, you can add premium billing/costing rate based on night working hours.
While creating Timesheet, if Employee selects this Activity Type, then premium costing rates will be fetched.
In the Timesheet, you can track From - To hours Employee worked for. If needed, you can also insert a Custom Field to track more information relevant for your business.
