But for example in Item Doctype that doesn’t have the field Company, can I add or there’s some reason to not have this field Company on Item doctype?

Multi-company feature in the ERPNext is allowed for the company where work-force and items among all the companies are common, but you have separate legal entities. Having common masters for all the companies will help you in creating transactions faster.
If needed, you can also insert Custom Link field of Company in the Item master, and restrict Users to limited items, based on the Company.
